Ingredients

  • 115g butter

  • 200g brown sugar

  • 1 tbs. ground coffee

  • 1 egg

  • vanilla extract

  • 220g flour

  • 1/2 pack of yeast

  • 1 tbs. sodium bicarbonate

  • 150g chocolate (eg. 80g dark with 70g white)

  • Praline for Decor (optional)

  • Pinch of salt

Directions

  • Preheat the oven to 180°C. Cut the room-temperature butter in pieces and add it to the brown sugar. Start mixing with a wooden spoon, and use hands if you feel it needs better mixing.
  • Add the coffee ground, pinch of salt and vanilla extract. Mix well until the mixture turns into a cream-like consistent. Then, add the egg.
  • Add the flour with the sodium bicarbonate and start mixing with the spoon, and then use your hands. Chop up the chocolate in big and small pieces – and add to the mixture.
  • Place a sheet of baking paper on your baking tray. Use a small spoon to grab some dough and roll it in your hands. Place the ball on the paper and slightly flatten it so its about 5cm wide. If you want, you can sprinkle some pralin on top to add some crunch!
  • Cook for 10 minutes for softer cookies, 12 minutes for soft and crunchy and 14 for crunchier cookies. Be sure to let them cool on a metal grill before eating.

Notes

  • The coffee ground will add an interesting taste, but it is by no means essential.
