Ingredients

  • 125g ground almonds

  • 125g icing sugar

  • 3 egg whites

  • 130g sugar

  • 33g of water

  • 60g of Nutella

Directions

  • Pass the almond powder and icing sugar through a sieve.
  • Add half of the egg whites. Mix with the maryse.
  • Heat the water and the sugar.
  • Whisk the egg whites at medium speed.
  • Cook the sugar to 120 ° C.
  • Pour in a stream against the wall of the bowl, whisking gently. Increase the speed of the mixer. The meringue should rise and cool slightly.
  • Once the meringue is well assembled, mix part with the first mixture.
  • Add the rest and mix. Be careful, it should not be too liquid.
  • Poach small discs of about 4 cm.
  • Bake at 160 ° C for 12 minutes. Let cool a little and peel off the shells.
  • Turn over every second shell. Fill half of Nutella and close.
  • Leave in the fridge for at least 1 hour before tasting.

Notes

  • The shells filled with this chocolate hazelnut paste make us melt with pleasure.
